Preparation:
1. Combine all topping ingredients in a bowl and season to taste.
2. Cut the polenta tube into 1/2-inch thick slices and trim into squares. Season with salt and pepper to taste.
3. Heat olive oil in a large skillet over a medium high heat and cook the polenta slices until golden, 3 to 5 minutes per side.
4. Spoon the topping on each polenta square, garnish to taste and drizzle some balsamic vinegar. Serve immediately.
