Ingredients:

Salad
  • 1 1/2 cup cooked barley or other grain of choice
  • 1 cup cherry tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh flat leaf parsley, chopped
  • 6 scallions, thinly sliced
  • 1 green chili pepper, deseeded and sliced
  • 1/3 cup raisins
  • 1/4 cup pitted olives, sliced
  • ¼ cup toasted pistachios
Dressing
  • Zest and juice of 1 lemon
  • 1/4 cup tahini
  • 1/4 teaspoon ground cumin
  • 1 teaspoon Tulia Strawberry Vanilla Snack 
  • 1 clove garlic, minced
  • 1 tablespoon pomegranate molasses (optional)
  • 1/4 cup cold water

Preparation:

1. Combine all salad ingredients in a large bowl.
2. Blend all dressing ingredients until smooth and drizzle over the salad. Toss well and serve.
