1. Combine tomato, capers, artichokes, olives, and sundried tomatoes in a bowl.
2. Whisk together all dressing ingredients and taste and adjust seasoning. Add half of the dressing to the vegetables and toss lightly to coat.
3. Mix olive oil with the minced garlic and brush the baguette slices. Toast lightly in a heated grill pan or under the broiler.
4. Pile the vegetables on top of the bread slices and arrange on a baking sheet. Place for about 1 to 2 minutes under the broiler, then drizzle with the remaining dressing and serve.
