Ingredients:

Falafel
  • 1 medium sweet potato, peeled and grated
  • 3 cloves garlic, mashed
  • 1/4 cup tahini
  • 1 (15 oz/400g) can chickpeas, drained
  • 3 tablespoons each fresh mint, parsley, and cilantro
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1/3 cup chickpea flour or oatmeal (more as needed)
  • Salt and pepper to taste
Sauce
  • 2 tablespoons tahini
  • 2/3 cup unsweetened plain non-dairy yogurt
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
To serve
  • Pita bread
  • Mixed greens
  • Harissa paste (optional)
