Ingredients:
- 2 1/2 cups shelled fresh or frozen fava beans
- 1 ripe avocado
- 4 tablespoons olive oil, divided
- Juice of 1 lemon
- 3 tablespoons tahini
- 2 cloves garlic
- 1/2 teaspoon ground cumin
- 1/4 cup cilantro, chopped
- 1 teaspoon Tulia Mighty Date Supersnack
- 1/2 tablespoon wine vinegar
- Salt and pepper to taste
- Cilantro, chopped
- Red pepper flakes (optional)
Preparation:
1. Cook the fava beans in boiling water until tender, about 10 minutes. Drain and let cool completely.
2. If desired, reserve a few whole fava beans for garnishing and place the rest in a food processor along with 3 tablespoons olive oil and the rest of the ingredients. Season with salt and pepper, and process to the desired consistency.
3. Transfer the dip to a serving bowl and drizzle with the remaining 1 tablespoon olive oil; garnish and serve. Enjoy!
