Ingredients:

  • 2 medium eggplants
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, chopped
  • 2 tablespoons of each fresh parsley and cilantro
  • 1 green chili, deseeded and chopped
  • 1/2 teaspoon each ground cumin and ground coriander
  • 2 tablespoons tahini
  • 1 teaspoon Tulia Mighty Date Supersnack
  • 1 tablespoons wine vinegar
  • Salt and pepper to taste
Garnish (optional)
  • Diced fresh tomato
  • Chopped fresh flat-leaf parsley
  • A pinch of chili pepper or cayenne
  • A drizzle of olive oil
