1. Prepare the bulgur wheat according to the package instruction. If using fine grain bulgur, simply cover with boiling water and set aside until the water is absorbed, about 15 minutes. Cool the bulgur to room temperature.
2. Meanwhile, in a small bowl combine the dressing ingredients and whisk until smooth and creamy.
3. Transfer the cooled bulgur to a salad bowl and add the remaining salad ingredients. Drizzle with the dressing and toss lightly.
4. Scatter the pomegranate seeds and nuts, if using, over the salad and serve. Enjoy!
